Grilled Mixed Vegetables
I grill vegetables in our grill baskets (ideal) and on skewers. I don't skewer meats (kebobs) too much, because they are hard to keep from drying out. Nothing fancy here -- just a selection
of vegetables I like to grill and the basic preparation before they go in the grill baskets or on the skewer.
Ingredients:
- Red bell peppers
Sliced lengthwise, drizzed with a mixture of balsamic vinegar, olive oil, lemon juice, salt and pepper
- Mushrooms
Stems on or off, brushed with butter
- Corn-on-the-cob
Sliced into 1.5 to 2-inch sections, butter and salt, best grilled loosely, right on the grate
- Zuccini
Olive oil, salt and pepper
Cooking:
The bell peppers and corn will benefit from some char, which is easier to get right on the grill. Don't let them mushrooms dry out. Serve hot.
